Hope is the bright one: an Agtron 80 light roast with green apple, jasmine, and honey. Charity sits in the middle at 60 — milk chocolate, orange zest, and almond, the bag everyone at the table will drink. Faith is the dark anchor at 45: brown sugar, molasses, and a buttery body that stands up to milk or an espresso basket.

What’s an Agtron score?
Agtron is the coffee industry’s objective measure of roast color, read by a spectrophotometer. Higher numbers are lighter roasts; lower numbers are darker. Light roasts sit around 70–80, medium around 50–60, dark around 35–45, and French roast at 30–35. We print the number on every bag so you know exactly what you’re getting.
Where does the money go?
100% of Knights Coffee net profits go to the Seminarian in Need fund of the diocese you choose at checkout. The fund covers the ordinary costs of formation — books, a car repair, a laptop, a flight home — so a man can focus on becoming a priest. Every bag. Every order.
Brewing tips
Use 1 gram of coffee for every 16 grams of water (about 2 tablespoons per 6 oz cup), water just off the boil, and grind right before brewing if you can. Light roasts like Hope shine in a pour-over; dark roasts like Fortitude and Justice love a French press. Faith was built for espresso.
